  • 75g soft light brown sugar

  • 150ml brandy or port

  • 2 cinnamon stick

  • 1 bottle red wine

  • 4 cloves

  • 1 lemons sliced

  • 1 lemon wedges to serve


  1. Put all the ingredients, except the brandy or port, into a large pan.
  2. Bring the wine to the boil to dissolve the sugar.
  3. Remove, cover the pan and leave it to stand for 5 minutes, to allow the flavours to infuse.
  4. Strain to remove the spices and lemon slices.
  5. Add the brandy or port and serve warm, with a fresh slice of lemon.
