Pomodoro mozzarella (tomato and mozzarella)

  • 1 tbsp olive oil

  • 150g mozzarella organic buffalo if possible

  • 1 handful olives (optional)

  • 8 tomatoes fresh

  • 1 handful fresh basil


  1. Slice the mozzarella and tomatoes.
  2. Arrange on a large serving plate with one basil leaf for each slice of mozzarella - alternate mozzarella and tomato overlapping or let the little helpers make 'faces'.
  3. Add the olives if using them.
  4. Drizzle generously with the olive oil and season.

Handy Hint

Great one to do with little helpers as there's no cooking involved. This is a very simple dish - usually a starter but also great side dish for almost anything. The quality of the ingredients are what make this a superb dish - get the best you can.

    love this too- have made it loads as an easy side. a splash of balsamic vinegar & fresh coarsely ground black is really lovely on it too.
