Quick and easy microwave sausage special fried rice

  • 1 onion chopped

  • 1 splash soy sauce (to taste)

  • 2 eggs beaten

  • 400g rice

  • 1 handful frozen peas

  • 25g butter

  • 1 handful frozen sweetcorn (optional)

  • 1 Matteson's smoked sausage or similar sliced


  1. Boil kettle and pour water over bowl of peas and sweetcorn (if using).
  2. Put butter and onion into large microwavable bowl and cook on high for 2 mins.
  3. Add beaten eggs and microwave on high until eggs are half set (about 2 - 3 mins).
  4. Using fork break up cooked eggs then stir in cooked rice, sliced sausage, drained peas and drained sweetcorn and desired amount soy sauce.
  5. Microwave to heat through and cook eggs - about 7 mins.

    We had this for dinner tonight and everyone loved it - we left out the peas and threw some of last night's chicken in as well as the sausage. It was delicious and inexpensive thank you.

    This is genius, I had a load of frozen chicken and sausage stew portions that my dd had gone off so I just used that as the meat portion. She won't touch eggs normally but I was able to sneak them past her in this really tasty recipe!
