Sweet potato soup

  • 1 pint vegetable stock

  • 2 large carrots

  • 125 fresh orange juice

  • 2 onions

  • 2 large sweet potatoes

  • 1 tbsp creme fraiche (optional)


  1. Chop the vegetables roughly.
  2. Fry the onions in the oil until golden.
  3. Add the carrots and sweet potato and fry for a couple of minutes to heat them through.
  4. Add vegetable stock until the vegetables are just covered.
  5. It's easier to add more if needed than reduce if too much is added.
  6. Season and boil for 20 minutes, checking that the carrots are soft.
  7. Add the orange juice and then blend until smooth.
  8. Swirl through some crème fraîche to serve.

Handy Hint

Rather than making up stock before hand, add boiling water and then 1-2 vegetable stock cubes.
