  • 1/4 onion diced

  • 450ml milk

  • 1 handful cheddar grated

  • 1 potato per person

  • 1 cauliflower

  • 1 tbsp plain flour

  • 2 tbsp butter or margarine


  1. Fry the onion in a knob butter or margarine. Add another knob of margarine or butter and melt, then add a tablespoon of plain flour and mix in.
  2. Add a small amount of milk and mix, add some more and mix again until all of the milk is gone, keep stirring until it thickens. Add a big handful of grated cheddar cheese to make it a cheese sauce.
  3. Drain the potatoes and cauliflower and put in an ovenproof dish. Pour over the cheese sauce, sprinkle cheese over the top and bake for 15-20 minutes at 180C/Gas Mark 4.

Handy Hint

You can use brocolli instead of cauliflower.
