  • 2 tsp olive oil

  • 1360g potato chopped into medium-sized pieces

  • 280ml vegetable stock

  • 2 red onion sliced

  • 115g cheese cubed

  • 2 cloves garlic chopped

  • 1 tsp dried rosemary

  • 2 tbsp creme fraiche

  • 6 slices bacon


  1. Put potatoes on to boil until soft, about 15 minutes.
  2. Meanwhile, fry onion and garlic in oil until translucent.
  3. Add bacon to onions and fry until going crispy.
  4. Mix potatoes and onion mixture together in an oven proof dish.
  5. Add creme fraiche to stock.
  6. De-glaze pan with stock mixture and pour over potatoes.
  7. Scatter cheese on top.
  8. Bake in hot oven for 25 minutes or until liquid is bubbling and cheese is melted and golden.

Handy Hint

Serve with green vegetables and crusty bread to dip up juices. Mozzarella and cheddar cheeses are good in this

    Made this up tonight to feed 3 fussy little ones and a teenager. They wolfed it down! Could be served to a baby but watch the salt content with the bacon!
