Sausage and carrot pasta sauce

  • 1 large onion

  • 1/2-1 tins chopped tomato

  • 1 pint stock

  • 3 large carrots

  • 400g sausages


  1. Chop onion small and fry gently in pan to soften without browning.
  2. While onion is frying, remove skin from sausages and pull apart into small chunks.
  3. Turn up heat and add sausage meat, stirring it around and mashing with a fork to break it up small.
  4. Peel and grate carrots, and add to mixture in pan - fry another few minutes.
  5. Add tomatoes and liquid, and simmer for 30 minutes.
  6. Season to taste (may not need much depending on sausages) and serve over pasta.
