  • 175g self-raising flour

  • 50g icing sugar

  • 125g icing sugar (for vanilla icing butter)

  • 1 tsp vanilla extract

  • 1 tsp vanilla extract (for vanilla icing butter)

  • 125g cornflour

  • 225g butter

  • 50g butter softened (for vanilla icing butter)


  1. Put flour, cornflour and icing sugar in food processor and mix briefly. Add butter (chopped into small chunks) and vanilla and mix until it comes together into sort of dough (can take a few minutes).
  2. Roll mixture into small balls size of marble and place on baking tray with a little space in between.
  3. Dip a fork in cold water and press down on each one to flatten slightly and score.
  4. Bake for 10-15 mins at 160C fan/325F/gas 3.
  5. I put melted chocolate between them, otherwise, mix 50g butter, 125g icing sugar and villa extra together in food processor again (no need to clean after last use). Keep at room temp to remain soft.

Handy Hint

Easy to make but look great for baking stalls etc and, of course, are lovely to eat!

    These are really good. Kids had fun helping to roll the dough into balls.
