Easy veggie bean-y stew

  • 1 onion chopped

  • 1/2 green pepper chopped

  • 1 tin baked beans

  • 1 tomato chopped

  • 1 handful tofu hotdogs


  1. Fry onion until translucent then pile in rest of ingredients.
  2. Stir and put on lid so steam can escape.
  3. Simmer for 20 mins.
  4. Pour into a large bowl and eat with some lovely buttered bread.

Handy Hint

One from student days (also works well on a comfort food level). Red or yellow peppers can work but are a little too sweet for my taste.

    Instead of Tofu hot dogs you can use Quorn/Soya ones, now sold in most supermarkets, some even do their own cheaper version now as well. Holland and Barrett is also a good bet.

    I know it sounds a little 'unskilled' but after years of trying the cordon bleu approach to cooking it's great to revisit some of the oldies!
