  • 1 tsp vanilla extract

  • 1 tbsp baking powder

  • 3/4 tsp salt

  • 375g flour sifted

  • 250g unsalted butter

  • 4 large eggs

  • 230ml milk

  • 500g sugar


  1. Preheat oven to 350C.
  2. Beat the butter for about 3 to 4 minutes until it is light and fluffy.
  3. Add the sugar and vanilla and beat until all the ingredients are mixed. Add eggs, one at a time, and beat the whole mixture until eggs are well combined.
  4. Sift together the flour, baking powder and salt. Add about 1/2 of the flour mixture to the butter, mix until incorporated, add about 1/2 the milk, mix until incorporated, add the remaining flour, mix until incorporated and finally add the rest of the milk, mix until incorporated.
  5. Line muffin or cupcake tins with paper cupcake liners. Fill each liner about 3/4 full with batter.
  6. Bake in pre-heated oven about 15 to 20 minutes, or until cooked through and the top begins to turn golden brown. Remove from oven and let cool.
  7. Frost tops with orange-coloured frosting, draw faces with melted chocolate or red-coloured frosting.
