  • 1 tbsp olive oil

  • 15g brown sugar

  • 1 pinch black pepper

  • 150ml chicken stock

  • 1/2 large red onion sliced

  • 2 cloves garlic chopped

  • 60ml teriyaki sauce

  • 1 fresh red chilli pepper, finely chopped (or a pinch of dried chilli flakes)

  • 500g pork tenderloin

  1. Heat the olive oil in a saute pan over medium-high heat. Brown tenderloins on all sides, about 10 minutes.
  2. Meanwhile, mix together teriyaki sauce, chicken stock and brown sugar in a bowl. Stir in garlic, red chilli pepper, onion, and black pepper.
  3. Put browned tenderloins into slow cooker, cover with the teriyaki sauce mixture.
  4. Cook on high for about 4 hours, turning 2 to 3 times during the cooking time to ensure even cooking.
  5. Remove tenderloins from the slow cooker and let them rest for 5 minutes before slicing.
  6. Spoon liquid over slices when serving.

Handy Hint

No need for extra salt as chicken stock is quite salty.

Makes a change from the usual 'casserole'-type slow cooker recipes.
