Baked potato with prawns and avocado

  • 1 handful lettuce

  • 1 jacket potato

  • 1 prawns

  • 1 cucumber

  • 1 seafood sauce or tomato ketchup mixed with mayonnaise

  • 1 avocado


  1. Cook the potato in the oven for at least an hour.
  2. Whilst the potato is cooking, chop the lettuce and cucumber up into small chunks.
  3. Then, de-stone the avocado and chop it up. Mix with the prawns, lettuce and cucumber.
  4. Add to the jacket potato when cooked.

Handy Hint

If you do not have time to cook a jacket potato then a sandwich or a roll will do nicely. If you have time for a jacket then make sure you cut the potato evenly and add a small amount of butter.
