Chicken and mushroom bites

  • 1 knob ginger

  • 1 organic chicken thigh skinless and boneles

  • 3 tbsp sunflower oil

  • 1/2 tsp cumin

  • 4 slices white bread (or brown bread)

  • 4 closed cup mushrooms

  • 2 cloves garlic

  • 1 small onion


  1. Chop and fry the onion in a tablespoon of oil. Dampen the bread slightly with wet hands and tear roughly.
  2. Blitz all the ingredients in a food processor. Then mix with the onion and form into little balls in the same mixing bowl.
  3. Pour the rest of the oil over the little balls. Cook in a hot oven at 190°C/170°C fan for 30 minutes.

You can freeze these in a bag for up to six weeks

    I've always wanted to make little balls and fingers of stuff for my 10 moth old, but it's hard after my long work days. This was something I whizzed up while cooking dinner for my bigger man. It was tasty my nany and I both ended up snacking on them. I hope you like them too.
