Pretty asparagus & smoked salmon tart

  • 200ml double cream

  • 1 shortcrust pastry (can be lazy and just buy it or else follow Rachel Allen's v quick and yummy recipe)

  • 3 eggs

  • 125g smoked salmon pieces

  • 175g asparagus

  • 1 tsp thyme chopped

  • 1 drop lemon juice

  • 1 tsp parsley


  1. Blind bake pastry case if not using pre-baked one.
  2. Steam asparagus and pat dry.
  3. Beat eggs with the cream, lemon juice and herbs, add smoked salmon pieces, season, and pour gently into pastry case.
  4. Lay asparagus gently on top to create a fanned out circle which looks so pretty.
  5. Bake for 20 - 25 mins at 180'C til golden and lightly set.

    Looks fantastic as part of a buffet for a party, equally delicious hot or cold so perfect for picnics, lovely with salad for light lunch and can be made as individual tarts so great as a starter. Can vary ingredients seasonally. My child loves it!
