  • 2 tsp vanilla extract

  • 230ml milk

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 190g sugar

  • 5 egg whites (at room temperature)

  • 170g butter (unsalted at room temperature)

  • 4 tbsp multicoloured sprinkles

  • 250g self-raising flour


  1. Preheat the oven to 180C, and grease two 9” round cake pans. Dust with flour and shake out excess.
  2. In a medium bowl, sift together flour, baking powder and salt.
  3. In a larger bowl, using a mixer and beat the butter until light. Gradually add the sugar, beating until well blended.
  4. To the butter and sugar, add the vanilla extract. Reduce speed to low, and alternately beat in the flour mixture and the milk, beginning and ending with the flour mixture. Do not overmix.
  5. In a large bowl beat the egg whites until stiff peaks form. Using a rubber spatula, gently fold the whites into the batter until just combined. Fold in the sprinkles. Divide batter between prepared pans, and smooth with a spatula.
  6. Cook for about 30 minutes.

Pink butter icing and a few more sprinkles on the top.

    I made this as a birthday cake. It was light and delicious with multicoloured flecks like fireworks in the cake. Just fabulous.
