Hey! I'm George from the New Covent Garden Soup Co. and we're running a Soup of the Month competition that we'd love you to enter. ( ) We really love the thai-style angle that you've brought to this classic and it would be a great entry :)

This is a great warming soup, so easy to make and can be frozen. To make it a one dish meal you can add chopped smoked sausage (Herta/Mattesons type) - fantastic!
