Gooey chocolate chip cookies

  • 220g caster sugar

  • 15g baking powder

  • 250g soft margarine

  • 2 eggs

  • 1 handful chocolate chips (or as many as you like)

  • 220g light brown soft sugar

  • 500g plain flour


  1. Beat the margarine and the sugars together until they are light and fluffy.
  2. Add the eggs and beat again.
  3. Add the flour, baking powder and chocolate chips and slowly beat together. It will form a firm enough dough that you can roll it into balls with your hands.
  4. Depending on how greedy you are, use a generous teaspoon or tablespoon of mixture to form each cookie, roll into a ball and then flatten out on a lined and greased baking tray (if you have silicone so much the better).
  5. Bake in a fan oven at 160C for 10 minutes and put straight onto a cooling rack. The biscuits should be still soft in the middle - just like the ones you get in coffee shops.

Handy Hint

You can exchange the chocolate chips for raisins, glacé cherries, nuts, whatever takes your fancy. The mixture will keep very well in the fridge for over a week - so it's a very handy dough to have on hand to knock up should you have unexpected visitors/hungry husbands and children !

    I've been using this recipe for 14 years now and it's by far my favourite, easiest biscuit. Everybody loves it :) If you use margarine this is suitable for dairy free diets
