Peach and amaretti muffins

  • 2 tsp baking powder

  • 125g sugar

  • 90ml sunflower oil

  • 2 tsp almond essence

  • 2 eggs

  • 250g plain flour

  • 1 peach stoned and cut into 1cm pieces

  • 8 amaretto biscuits roughly broken


  1. Sieve flour and baking powder into bowl.
  2. Add pinch of salt and the sugar.
  3. Mix eggs, oil and yoghurt separately, add the almond essence.
  4. Stir wet ingredients into dry until just incorporated, don't over-mix.
  5. Lightly stir in chopped peach and biscuits.
  6. Spoon into muffin cases in muffin tray.
  7. Bake 10-15 minutes at 190C, take out when golden brown and firm.
