  • 140g self-raising flour

  • 115ml oil

  • 375g courgette

  • 80g cheese (grated)

  • 3 slices bacon

  • 5 eggs

  • 1 large onions


  1. Grate all the courgette, chop the bacon and onion.
  2. Combine these with the flour, oil, eggs and cheese. Mix well.
  3. Pour mixture into a greased ovenproof dish (16x26cm approx).
  4. Bake in a oven at 180C/Gas Mark 4 for 30-40 mins (until golden on top).

    Made this tonight and it is really REALLY good. DH was v enthusiastic. DD won't countenance courgettes so have not yet tried it with her. I used 100ml of oil and still found that likely to be too much so will try 75my next time.

    Does it really require 115ml of oil or is that a typo for 15 ml?

    Am I being dim? In the ingredients it mentions aubergine but in the instructions it's courgette. Can you clarify which I need to use. Thanks!

    This was my kind of recipe, so easy - no pre-cooking. Fussy DD ate it and wants it in her lunchbox, 'normal' DS wouldn't touch it though, typical. But I count 1 out of 2 children eating it as a success for me :-)

    Not sure which category - its more for simple at home lunch than lunchbox, although that does work too - easy to keep in the fridge for a few days and parcel out. Also could be under toddler.
