  • 100ml olive oil

  • 75g goat's cheese or soft cheese

  • 1 clove garlic

  • 425g dried pasta

  • 25g pistachio nuts shelled

  • 75g rocket salad

  • 25g gruyère cheese grated


  1. Cook pasta until it is al dente.
  2. Blend remaining ingredients in a food processor to form a smooth paste.
  3. Drain pasta and tip back into the pan.
  4. Add the pesto, adding a little hot water if too thick.
