  • 125g self-raising flour

  • 125g caster sugar

  • 1 tbsp milk

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • 125g unsalted butter

  • 2 eggs


  1. Preheat the oven to 180C and line a cup-cake tray with paper cases.
  2. Put all the ingredients (except the milk) in a blender.
  3. Blend until smooth, add the milk and spoon into cupcake cases.
  4. Cook in the oven for about 15 minutes.
  5. Leave to cool then ice.

    Very easy and quick. To include in your cookbook I think I would suggest some variations. Eg, instead of vanilla essence, use the grated rind of one orange or one lemon; add 1/2 tsp ground cinnamon and put a slice of eating apple on top before baking; put a whole raspberry into the cake before baking etc. and maybe mention ideal proportion of liquid to icing sugar for making the icing.
