Idiot-proof berry and caramel pudding

  • 600ml cream

  • 2 tins caramel

  • 2 handfuls blueberries

  • 400g lady's fingers

  • 2 handfuls raspberries


  1. Place a layer of finger biscuits in square dish. Mix the berries together and add over biscuits.
  2. Beat the caramel until pouring consistency and pour over berries. Whip cream till spreading consistency and pour over caramel.
  3. Garnish with flake or grated chocolate.

Handy Hint

If you want you can pour a bit of berry juice or some cassis (for alcoholic version) over the berries to moisten them, but don't make too soggy.

    This very quick and easy pudding is my " please bring along a pudding" staple. The contrast between the sharpness of the berries and the sweetness of the caramel is fab. A hit every time and it takes no cooking. Most work you have to do is a bit of beating.
