Roast tomatoes with mustard

  • 1 tsp wholegrain mustard

  • 1 plum tomatoes (one per person)

  • 1 tsp Parmesan (optional)


  1. Pre heat the oven to 180C
  2. Cut tomatoes in half, remove green bit at top
  3. Place tomato halves skin sides down on roasting tray
  4. Put thin layer of mustard over top of tomatoes
  5. Drizzle or spray with olive oil
  6. Sprinkle with small amount of Parmesan (if using)
  7. Season according to taste
  8. Roast in oven for 15 minutes

Handy Hint

Great as an alternative from the normal accompaniments to a roast dinner, sausage and mash, risotto….
