Slow-cooked pork casserole with hidden veg

  • 475ml chicken stock

  • 1 tin sweetcorn

  • 3 large carrot

  • 2 parsnips

  • 8 cauliflower

  • 1 tin tomatoes

  • 3 onions

  • 1kg pork joint (cheapest you can get)

  • 1 crusty bread (to serve)

  • 1 handful greens (or brussel sprouts)


  1. Slice the onions, carrots and parsnips and put in the bottom of a slow cooker pot. Lay the pork on top.
  2. Pour the stock around the meat. Add extra water if you need to. Cook for about 4 hours on high.
  3. Put the greens and cauliflower into a saucepan with just enough water to cover. Boil for 10-15 minutes until soft.
  4. Take the pork and some carrot and parsnip out of the slow cooker pot. Slice the pork and return to the pot. Put the carrot and parsnip into the saucepan, and blend all the veg (including the cooking liquid) with a hand mixer until all the lumps have gone and there are no recognisable 'green bits'.
  5. Pour it into the slow cooker with the tin of sweetcorn. Cook for another hour, then serve it with nice fresh crusty loaf or over rice.

Handy Hint

If your child hates the idea of 'greens', play a game where you colour some of the cooked rice green and stir it into the pot. Then they'll eat all the green bits with no fuss!
