  • 1 pint double cream

  • 225g sugar

  • 2 lemons juiced and rind grated

  • 1 bowl iced water (for cooling)


  1. Bring the sugar and cream to boil. When boiling reduce to simmer for exactly 3 minutes.
  2. Remove from heat and cool in iced water for 3-4 minutes.
  3. Stir in juice and rind.
  4. Pour into serving bowls and chill until set.

Handy Hint

Wine glasses make excellent serving dishes.
