Smooth thick winter vegetable soup

  • 1 tbsp tomato puree

  • 2 tbsp parsley

  • 1 leek cut into rings

  • 1 1/2 pints beef or veg stock

  • 2 onions peeled and finely chopped

  • 1 carrot finely diced

  • 1oz butter

  • 1/2 small turnip finely diced


  1. Melt the butter in a deep pan and add the onions. Cook until transparent or for 5 mins gently.
  2. Add the carrot, turnip, stock, seasoning and parsley.
  3. Bring it to the boil and simmer gently for 15 mins.
  4. Add the leek and tomato puree, cook for a further 20 mins.
  5. Blend and serve!

Handy Hint

Turnips can sometimes be hard to get hold of but I find the recipe works just as well without it. I just use a large potatoe instead. If your vegetarian, just replace the beef stock for veg stock.
