Granny's apple cake

  • 2 tsp baking powder

  • 250g sugar

  • 2 tsp cinnamon

  • 300g flour

  • 1 tsp nutmeg

  • 2 eggs

  • 8oz butter

  • 4 granny smith apples or any apples really

  • 200g raisins

  • 125g walnuts optinal

  • 1 tsp all spice


  1. Peel and roughly chop the apples.
  2. Add the sugar and leave while doing the rest of the cake.
  3. Melt the butter.
  4. Add the eggs and mix well
  5. Add this mixture to the apples.
    6.Sift the dry ingredients and mix into the wet mixture.
  6. Add the sultanas (or raisins and walnuts)
  7. Bake at 180C for 1 1/2 hours in a 23 cm tin. Check that the middle is cooked with a skewer. If it's a little bit sticky on the skewer, that's fine - it's a moist cake - but you don't want raw mixture there.
  8. Dust the top with icing sugar.

    This makes a big solid moist cake and it is even better the second day! It's a winner with everyone who trys it. Delicious.
