  • 180g self-raising flour

  • 1/2 tsp vanilla extract

  • 100g caster sugar

  • 1 large egg

  • 120g white chocolate chopped

  • 4 cardamom pods deseeded and seeds ground

  • 250g butter

  • 100g pistachio nuts chopped


  1. Cream the butter and sugar, then add the egg, flour, vanilla, chocolate, chopped nuts and cardamom.
  2. Bake at 180C for around 12-15 minutes.

Handy Hint

Cookies do not need to bake for as long as you think. Take them out as soon as they resist a fork - don't leave them in until golden-brown and rock-hard or they will not be chewy.

    I can't remember how I thought of cardamon, pistacio and white chocolate - mabe because of kulfi ice cream. Anway, everyone who has tried these has loved them.
