Chorizo and chickpeas

  • 1 medium onion

  • 1 tbsp olive oil

  • 1 tin chopped tomato

  • 300g chorizo

  • 3 tins chickpeas rinsed or pre-soaked from dried


  1. Take skin off the chorizo and slice into one pound coin size pieces.
  2. Fry the chopped onion in oil to soften, add in the chorizo and cook on medium heat for 5 minutes or so.
  3. Add in the drained chickpeas and finally the tomatoes with their juice.
  4. Can be ready after 10 minutes simmering or left for ages on a low heat until you are ready.
  5. Serve with chunk of wholemeal bread to mop up the lovely juices.
