Cucumber and cream cheese sandwiches

  • 1 tbsp cream cheese

  • 1 splash white wine vinegar

  • 1 loaf of white bread

  • 1 cucumber thinly sliced

  • 1 tbsp butter softened

  • 1 pinch ground black pepper


  1. Put cucumber slices in a shallow bowl, drizzle with white wine vinegar (don't drown them!) and leave for 30 minutes.
  2. Drain cucumber slices and pat dry with kitchen roll.
  3. Spread two slices of bread thinly with butter, then spread one half of each sandwich with cream cheese. Cover cheese with overlapping cucumber slices. Sprinkle with ground black pepper. Cover with other slice of bread.
  4. Cut off crusts and then slice diagonally twice, to create four small triangular sandwiches.
  5. Arrange tastefully on plate.

Handy Hint

Add chopped fresh herbs such as mint, chives or dill to the butter, for extra flavour. If making in advance for a tea party, put in airtight container in cool place. Use low fat cream cheese to cut calories. Use brown bread if you prefer.
