  • 1 onion

  • 4 chicken breast or 8 chicken thigh pieces

  • 1 tin chopped tomato

  • 1 bottle passata

  • 1 handful button mushrooms


  1. Coat boneless chicken pieces in flour seasoned with salt and pepper and any other seasoning you wish.
  2. Fry a chopped onion. Add chicken pieces and fry gently in pan with some oil until browned.
  3. Put into casserole dish, cover with tin of tomatoes, fresh or tinned button mushrooms and the jar of passata.
  4. Put the lid on and place the casserole in the oven for an hour at 200C or two hours at 140C.
  5. The sauce thickens, the chicken is succulent, it is low fat and healthy. Serve with rice, pasta, potatoes, crusty bread or a pile of green veg if you prefer.
