Buttered pea and cheese pasta

  • 200ml double cream

  • 4 tbsp butter

  • 55g Parmesan grated

  • 450g fresh peas

  • 450g linguine (or tagliatelle or spaghetti)


  1. Put the pasta on to cook while you make the sauce.
  2. Melt the butter and add the peas, cooking over a low heat for 2-3 minutes.
  3. Pour 150ml of the cream into the pan. Bring to the boil then simmer for 1-1.5 minutes until slightly thickened, then remove from the heat.
  4. Add the sauce to the cooked pasta, return to the heat and add the remaining cream and the cheese. Toss the pasta gently while heating so that it is evenly coated in the sauce, then serve.

Handy Hint

You can use frozen peas and just let them defrost a little before popping then in the pan.
