  • 1/2 tsp vanilla extract

  • 450g caster sugar

  • 120ml milk

  • 1 knob butter

  • 397g sweetened condensed milk


  1. Grease a square baking tin (with tall sides) with butter.
  2. Heat sugar and milk slowly in a heavy based saucepan until all the sugar dissolves.
  3. Add the condensed milk and bring to the boil.
  4. Boil for about 15-20 minutes until it becomes pitted like a moon base.
  5. Then boil for another 5 minutes until it comes off the sides of the pan easily.
  6. Pour into the greased tin.
  7. Leave to cool for 10 minutes, mark into squares of desired size and cut when completely cool.

    I wouldn't be letting my children help with this, a burn from boiling sugar is serious. This is pretty much banned from home cooking lessons in Scottish schools now.

    Does the vanilla go in at the start?

    Haven't tried this version but I'd be dubious TBH without a thermometer and lots of beating. Shop bought will have lots more ingredients in it. The recipe I use does last quite awhile - it's pretty much all sugar!

    I see it has milk in it. How long does it keep, and should it be refrigerated? Is shop-bought tablet the same ingredients?
