  • 1l vegetable or chicken stock (plus extra if you prefer a thinner soup)

  • 500g frozen peas

  • 1 handful mint

  • 1 splash cream


  1. Cook the peas in the stock.
  2. Carefully pour peas and stock into a blender and add the mint. You could also use a hand blender.
  3. Add more mint, salt and pepper to taste.
  4. Add extra stock if you like a thinner soup. Add cream for a creamier soup.

Handy Hint

Blend the peas and stock in batches if necessary, as over filling the blender can lead to an Exorcist-style pea explosion.
