  • 3 ripe tomato thinly sliced

  • 2 onion thinly sliced

  • 1 olive oil

  • 2 courgette thinly sliced

  • 1 handful fresh thyme

  • 1 large aubergines thinly sliced

  • 3 medium potatoes thinly sliced


  1. Sprinkle a little olive oil into the bottom of your tian (or large oven proof dish)
  2. Begin layering the vegetables in the dish starting with the onions, potatoes, aubergine, courgettes and tomatoes.
  3. Sprinkle each layer with salt and pepper and a little crumbled thyme.
  4. Finish the top layer with tomatoes and sprinkle a olive oil over the top.
  5. Place in a hot oven and bake for about 40 minutes.
  6. This is often eaten hot but can also be served cold.

Handy Hint

A tian is a dish. If you don't have one, just use any oven proof dish, it will taste just as fabulous!

    This is a lovely summer dish originally from the South of France where the locals would make good use of the fresh summer vegetables. It is economical, very tasty and looks fabulous. Enjoy!
