  • 120ml oil

  • 240ml milk

  • 4 tsp baking powder

  • 1 tsp salt

  • 200g light brown sugar

  • 2 eggs

  • 175g blueberries

  • 275g plain flour


  1. Put milk, eggs, oil, and sugar in large bowl and mix well.
  2. In another bowl mix flour with salt and baking powder.
  3. Add the dry ingredients, to milk mixture, mix quickly, the mix will be quite lumpy (this is how it should be).
  4. Stir in the blueberries.
  5. Fill the muffin case to about 1cm below the top.
  6. Bake for 25 mins at 190C.

Handy Hint

Bake the day before and store in a tin.
