  • 500g boneless skinless chicken breast or thighs, cut into bite-sized pieces

  • 1 egg yolk

  • 3 tbsp olive oil

  • 1 tsp caster sugar

  • 450ml chicken stock

  • 1 lemon rind grated

  • 1 clove garlic peeled and chopped

  • 2 tbsp plain flour


  1. Mix the garlic and lemon in a bowl with the flour.
  2. Toss the chicken in the flour mixture until well-coated. Cover and set aside for 10 minutes.
  3. Heat the oil in a large frying pan or wok and fry the chicken until golden. Add the stock and the sugar and bring to the boil. Simmer until the sauce has reduced and the chicken is tender.
  4. Squeeze the juice from the lemon, blend with the egg yolk and add to the pan, stirring constantly until combined. Serve with rice.

    Tried this recipe and it is definitely a keeper! It was delicious and although dd didn't eat much of the chicken, she enjoyed the sauce and rice, especially with the addition of some prawn crackers! A very tasty recipe indeed!

    I made this with Dove's Farm gluten-free flour and it was fantastic! Went down very well with ds1 (though he said he'd have preferred potatoes with it!), while ds2 ate all his rice, a bit of the lemon sauce and left all the chicken... I've only just cottoned on to this recipe database and I'm thrilled at the thought we can break out of the fishfingers/sausages/pesto straitjacket we're in!
