Sneaky tomato sauce for pasta or pizza

  • 1 tin chopped tomato

  • 1 courgette chopped (and peeled if you or your children prefer)

  • 1 tin "no added sugar/salt" sweetcorn

  • 1 large carrots chopped

  • 1 bay leaves

  • 1 clove garlic

  • 1 pinch herbs eg oregano, marjoram


  1. Bung everything in a frying pan, mix well, cover and simmer for about 20 minutes.
  2. If you're a more accurate cook, fry the carrot with the garlic and oil until soft and then bung everything else in and simmer gently for about 10 minutes.

Handy Hint

For pizza sauce I blend it, which hides all the vegetables. Freeze in portions and defrost as required. I freeze it in ice cube trays to make it easy to get out the right amount.
