7 steps to top homemade chicken nuggets
The fast food favourite gets a bad rap. But if cook your own you'll know EXACTLY what's in them. From crumb to crisp, MNers share their suggestions
1. First, choose how you want the coating to stick to the chicken
Egg would be the standard one, but if you're factoring in intolerances, there are alternatives.
"If I want to avoid egg I put them into some buttermilk (or milk with a squeeze of lemon) for an hour or so."
"I use boneless, skinless chicken thighs - cut them into three, then dip in olive oil with a bit of soy sauce, and then breadcrumbs."
2. As for the coating, there are all manner of things you can try
The usual approach is to cover the pieces of chicken in a mix of seasoned flour and breadcrumbs. Or you could mix it up a bit...
"My son is gluten intolerant, so we use ground almonds instead."
"You can also use crushed cornflakes if you don't have any breadcrumbs."
"We roll them in cheese and onion crisps - it makes them even better!"
3. You can do grown-up versions too
"I sometimes add paprika, salt and pepper and herbs to the flour for us."
4. Grill, bake or fry? The jury's out
"I bake mine at 200 degrees for around 20 minutes."
"Frying is very quick. It only takes five minutes; just check they are cooked right through."
5. For smaller bites, try popcorn chicken
"If you have more time, we make popcorn chicken by blending the chicken with a splash of milk in a food processor, along with the teeniest hint of fresh herbs and a little lemon juice. Then, we roll it into balls, cover in flour or breadcrumbs, and shallow fry."
6. To freeze or not to freeze?
"You can freeze them after you've coated them, but before cooking. Put them on parchment and freeze before bagging up. When you're ready to eat them, just defrost and cook. Alternatively, you can freeze after cooking and reheat in the oven from frozen."
