No-bake energy bars

Need a bit of a boost at work or on-the-go? These super-easy energy bars are quick to blitz together using only three ingredients. Leave the chocolate out if you're after a healthier sweet treat that's refined-sugar free.

200g medjool dates (pitted)
150g regular dates (pitted)
200g cashews
100g choc chips


1. Crush the cashews in a sandwich bag using a rolling pin

2. Blitz the dates in a food processor, then add in the cashews and chocolate chips - and blitz again

3. Spread the mixture in a shallow baking tin lined with greaseproof paper, condensing it as much as possible to prevent it from crumbling later. 

4. Chill in the fridge for 20 minutes.

5. Cut into bars and serve!
