Five easy ways to cook tofu

Whether you're embracing Meat-Free Mondays, or simply looking to mix up your weekly dinners, we've rounded up five of the most exciting ways to cook with tofu

Fry it

“One of my favourite dishes right now is sticky tofu. Fry until golden in sesame oil, add sweet plum sauce and soy sauce and leave on the heat until the sauce bubbles and becomes sticky.”

Microwave it

“My son has invented something he calls tofu-chicken. He mashes tofu and mixes it with stock and an egg, before microwaving in a deep bowl for a few minutes until solid in the middle. It turns into something a lot less dry and bland than the shop-bought family roast substitutes.”

Throw it in a curry

“I gently fry a chopped onion and garlic in olive oil, then add ground spices like ginger, cardamom, plenty of turmeric, cumin and soy sauce with a bit of hot water or stock. I then cut the tofu into two cm chunks and add that in. Cook for five to 10 mins – sorted.”

Try it with something new

“I sauté grated courgette, then add to a kitchen mixer with silken tofu, a little bit of soy sauce and a tablespoon of gochujang. Stir until the mixture forms a batter, then start adding plain flour until it’s thick and won’t fall off a spoon easily. Fry spoonfuls of the batter to make tofu pancakes.”

Marinate it

“Tofu soaks up marinades really well. I marinate very fine slices in soy sauce, liquid smoke, tomato purée and nutritional yeast, then bake until they’re really crispy for vegan bacon. Really delicious with avocado in sandwiches.”
