Slice and dice them

Add some more grated cheese on top and put in the oven for 20-30 minutes until bubbling.”

“Slice courgettes into ribbons using a potato peeler and mix with king prawns and a creamy sauce. I like to serve this over gnocchi with plenty of cracked black pepper.”

Then mix the vegetables with some boiled brown rice and three beaten eggs, plus a big handful of grated cheese, some salt and pepper and a little nutmeg if you have it to hand. Place the mixture in a oven proof dish, top with breadcrumbs and more cheese and bake in the oven for 25-30 minutes.”
