This Quick Chicken and Broccoli Bake is very easy to prepare - and even easier if your partner does it while you put your feet up!
1 chicken breast
1 clove garlic
1 tbsp olive oil
1 large stem of broccoli
300g condensed soup chicken or mushroom
1 tsp lemon juice
1 tbsp mayonnaise
1 tsp hot curry powder
1 handful cheddar
Chop the chicken breast into chunks.
Finely chop the garlic put them both in a pan with a little olive oil and brown them over a medium heat.
Par boil the broccoli and evenly distribute the chicken and broccoli over the bottom of an oven-proof dish.
Start to heat the condensed soup and add in a large tablespoon of mayonnaise and squeeze in some lemon juice.
Add approx 1 tsp of curry powder and stir together.
Keep stirring and simmer so just bubbling for a couple of mins then pour on top of chicken and broccoli.
Grate some cheese on top and put it in the oven for about 20 mins on quite a high heat - around 180C, but don't worry too much as it's a very forgiving dish!
