This Smoked Mackerel and Egg Salad makes for a great light supper if you can’t manage a big meal at the moment.

  • 1 bag salad leaves, washed
  • 4 tomatoes, chopped
  • 0.5 cucumber, chopped
  • 1 ripe avocado, sliced
  • 5 hard boiled eggs, halved or quartered
  • 250g smoked mackerel
  • 80g olives
  • 1 splash olive oil
  • 1 lemon, squeezed
  • Put salad leaves in a large serving bowl.
  • Add the tomato, cucumber, avocado and the hard-boiled eggs and use your hands to mix thoroughly.
  • Flake the mackerel using a fork or your hands, and add to the salad with the olives.
  • Dress with the lemon juice, some olive oil and season with salt and pepper.
