Try this tasty light lunch for a Vitamin D boost - Tofu and Tomatoes.

  • 1 medium onion, diced
  • 1-2 tbsp sunflower oil (for frying)
  • 2-3 medium tomatoes, chopped and deseeded
  • 2 cloves garlic, thinly sliced
  • 400g tofu cut into 1cm cubes
  • 1 pinch sweet or chilli paprika
  • 1 bunch parsley, finely chopped
  • Soy sauce to serve
  • Soften the onions in a non-stick pan with a little oil, on a low heat for about 10 mins.
  • Add the tomatoes, stir, cover the pan and leave for about 5-10 mins, stirring occasionally
  • Then, add the garlic, and tofu, increase the heat a bit, stir fry for 3-4 mins. 
  • Sprinkle the paprika, turn the heat off but leave on the hob and stir until covered evenly with the paprika.
  • Finish with the chopped parsley and serve with soy sauce.
