Try this tasty light lunch for a Vitamin D boost - Tofu and Tomatoes.
1 medium onion, diced
1-2 tbsp sunflower oil (for frying)
2-3 medium tomatoes, chopped and deseeded
2 cloves garlic, thinly sliced
400g tofu cut into 1cm cubes
1 pinch sweet or chilli paprika
1 bunch parsley, finely chopped
Soy sauce to serve
Soften the onions in a non-stick pan with a little oil, on a low heat for about 10 mins.
Add the tomatoes, stir, cover the pan and leave for about 5-10 mins, stirring occasionally
Then, add the garlic, and tofu, increase the heat a bit, stir fry for 3-4 mins.
Sprinkle the paprika, turn the heat off but leave on the hob and stir until covered evenly with the paprika.
Finish with the chopped parsley and serve with soy sauce.
