4 large tomatoes
2 tbsp olive oil
2-4 cloves garlic
1 bunch asparagus
1 handful grated parmesan (if you're a vegetarian substitute this for another cheese)
4 handfuls cooked pasta
1 handful parmesan, grated
Cut a small X in the end of the tomatoes and submerge them in boiling water for 1 min, then take them out and peel the skins off. Roughly chop them.
Heat the olive oil and add lots of chopped garlic. After a few mins add the chopped tomatoes.
Steam the chopped asparagus in the microwave and add to the tomato mixture.
Allow to cook together for 5-10 mins.
Stir into the cooked pasta.
Serve with mozzarella and parmesan sprinkled on top.
