Easy-to-rustle-up recipes are the order of the day now. Try this quick and nutritious Pasta Asparagus.

  • 4 large tomatoes
  • 2 tbsp olive oil
  • 2-4 cloves garlic
  • 1 bunch asparagus
  • 1 handful grated parmesan (if you're a vegetarian substitute this for another cheese)
  • 4 handfuls cooked pasta
  • 125g mozzarella
  • 1 handful parmesan, grated

  • Cut a small X in the end of the tomatoes and submerge them in boiling water for 1 min, then take them out and peel the skins off. Roughly chop them.
  • Heat the olive oil and add lots of chopped garlic. After a few mins add the chopped tomatoes.
  • Steam the chopped asparagus in the microwave and add to the tomato mixture.
  • Allow to cook together for 5-10 mins.
  • Stir into the cooked pasta.
  • Serve with mozzarella and parmesan sprinkled on top.
