This super-healthy Broccoli Salad makes a good lunch for two, or a side dish for grilled meats for four. 

  • 1 decent-sized head of broccoli
  • 1 onion
  • 2 tbsp plain yoghurt
  • 1 tbsp balsamic vinegar
  • 2 tbsp mayonnaise
  • 1 splash lemon juice

  • Cut raw broccoli into florets or half florets (they should be small pieces) and place in bowl.
  • Chop onion very finely and add.
  • Add all the other ingredients and mix until the broccoli is well and evenly coated.
  • Place in fridge for at least 15 mins but no longer than half an hour.
