This super-healthy Broccoli Salad makes a good lunch for two, or a side dish for grilled meats for four.
1 decent-sized head of broccoli
2 tbsp plain yoghurt
1 tbsp balsamic vinegar
2 tbsp mayonnaise
1 splash lemon juice
Cut raw broccoli into florets or half florets (they should be small pieces) and place in bowl.
Chop onion very finely and add.
Add all the other ingredients and mix until the broccoli is well and evenly coated.
Place in fridge for at least 15 mins but no longer than half an hour.
