Zinc deficiency has been linked to low birthweight. Try these Crispy Chickpeas, either as a TV snack or stuffed into tortillas or pittas for lunch

Ingredients
  • 1 clove garlic, crushed
  • 1 pinch seasoning
  • 1 pinch spices
  • 1 tin chickpeas drained and rinsed
  • 1 handful flour (or cornmeal)
  • 1 packet of pitta breads or tortillas
  • 1 pinch parsley or coriander (optional)
Method
  • Mix your crushed garlic with a handful of flour, add seasoning and spices. 
  • Dredge your chickpeas in the flour or cornmeal.
  • Fry in around 1cm of hot oil until brown and crispy.
  • Stir in chopped herbs if using. 
  • Stuff into pittas or tortillas and serve with salad.
