This Sweet Potato Moussaka contains lots of beta-carotene, essential for your baby’s eye development, and it’s very tasty, too.

  • 2 tbsp olive oil
  • 500g pork mince
  • 800g chopped tomato (tinned or fresh)
  • 1 tbsp balsamic vinegar
  • 2 tbsp tomato puree
  • 2 cloves garlic, finely chopped
  • 2 large sweet potatoes, peeled and sliced into thin discs
  • 400g white sauce
  • 1 good handful grated parmesan

  • Fry the mince in with the tomatoes, balsamic vinegar, tomato puree and garlic until cooked through.
  • Spoon half of the mince mixture into a large oven dish, followed by half of the potato discs.
  • Pour 150g of white sauce across the mixture, then repeat step 2.
  • Pour white sauce onto the top and sprinkle with grated cheese.
  • Bake at 200C for 45 mins.
