This Sweet Potato Gratin takes just 10 minutes to prep and then you can sling it in the oven for an hour and a quarter while you have an after-work nap, and wake to the enticing aroma of your dinner all ready to be served.
Plate it up with a leafy salad and garlic bread for a main meal - or as a side dish for roast meats, particularly lamb (just remember to cook it thoroughly).
4-5 sweet potatoes, scrubbed but unpeeled
5 cloves garlic, crushed
2 handfuls sage, chopped
150ml double cream
Pre-heat the oven to 180C.
Slice sweet potatoes and toss in a bowl with sage, garlic, then season well with salt and pepper.
Arrange in ovenproof dish, overlapping the slices.
Cover in foil and bake for 45 mins.
Remove foil, pour cream over the sweet potato, put back in the oven to bake for further 30 mins.
